Skulls / Calaveras

This morning I ran into a taco stand piled high with sheep skulls. The proprieter told me they had been wrapped in leaves of the Maguey plant, and slow cooked in an underground oven. I ordered a taco, and he took a skull from the pile, broke it open with two brutal strikes of a cleaver, pulled out the meat from inside, fried it for about 45 seconds and handed me the sweetest, most delicate cabeza I've ever tasted. Topped with a little chile habanero, onion, and lime, it was taco heaven.

Este mañana encontré una taquería con un montán de calaveras de cordero. El propietario me dijo que cocinaron en horno bajo la tierra, envuelto con las pincas de maguey. Pidí un taco, y el tomó un calavera, la rompó con dos golpes brutales de su cuchilla, sacó la carne y la freió por unos 45 segundos. Luego me dió la mas dulce, mas delicato cabeza que yo he probado. Con un poco chile habanero, cebolla, y limon, era buenisimo!

Mas tarde, cuando caminaba a me casa, econtré este simpatico caballero que me permitó sacar un retrato a el.
